Description

A refreshing cold pasta salad with tricolor rotini pasta, crisp vegetables, Parmesan, and creamy ranch dressing. Perfect for busy meals or sides.

Ingredients

12 oz tricolor rotini pasta
1 cup chopped broccoli
1 cup chopped cucumbers (peeled and seeded)
1 cup chopped tomatoes
1/2 cup shredded Parmesan cheese
1 1/4 cups ranch dressing (plus extra to taste)
1/2 cup mayonnaise (for homemade ranch)
1/2 cup buttermilk (for homemade ranch)
1/4 cup sour cream (for homemade ranch)
1/2 tsp dried parsley (for homemade ranch)
1/2 tsp dried dill weed (for homemade ranch)
1/2 tsp dried chives (for homemade ranch)
1/2 tsp onion powder (for homemade ranch)
1/2 tsp garlic powder (for homemade ranch)
1/2 tsp Worcestershire sauce (non-alcoholic option, if concerned)
1/4 tsp salt (for homemade ranch)
1/8 tsp pepper (for homemade ranch)

Instructions

Cook pasta in salted water until al dente. Drain and rinse with cold water.
In a bowl, combine cooled pasta with chopped broccoli, peeled-seeded cucumbers, tomatoes, and Parmesan.
Add ranch dressing (store-bought or homemade) and toss until evenly coated.
Chill for 1-2 hours before serving.

Notes

Chilling enhances flavor. Substitute or omit Worcestershire sauce in homemade dressing if avoiding alcohol. Add more vegetables like bell peppers or carrots as desired.
