Description

A rich, no-cook dessert blending creamy peanut butter and deep chocolate flavors in a chia seed base. Made with dairy-free milk and natural sweeteners, this chilled pudding offers a satisfying texture and is perfect for prepping in advance for a quick, indulgent treat.

Ingredients

1/4 cup chia seeds
2 cups non-dairy milk
1/4 cup organic peanut butter
3 tablespoons unsweetened cocoa powder
2 tablespoons pure maple syrup
1 teaspoon vanilla extract

Instructions

In a bowl or jar, combine chia seeds, non-dairy milk, vanilla extract, maple syrup, peanut butter, and cocoa powder.
Stir everything together with a spoon or whisk until the mixture is completely smooth and no lumps of peanut butter or cocoa powder remain.
Cover the container and place it in the refrigerator to chill for at least 4 hours, or preferably overnight, until thickened.
Serve chilled topped with fresh banana slices, berries, or a dollop of coconut yogurt.

Notes

Stir thoroughly to avoid clumps. Refrigerate in airtight containers for up to 3 days. For a richer flavor, use full-fat coconut milk.
Adjust maple syrup to taste.
