Description
These Hot Honey Ground Beef Sweet Potato Bowls are made with roasted sweet potatoes, taco-seasoned ground beef, cottage cheese, avocado, and a warm hot honey drizzle. They work well for dinner or meal prep when the warm components are stored separately and the fresh toppings are added right before serving.
Ingredients
- 4 1/2 cups cubed sweet potatoes, about 1 1/2 pounds
- Salt, to season
- Black pepper, to season
- Cinnamon, to season
- 1 pound lean ground beef
- Tomato paste
- Taco seasoning
- 2 cups low-fat cottage cheese
- 1 large avocado or 2 small avocados, sliced
- 4 tablespoons hot honey
Instructions
- Preheat the oven.
- Season the cubed sweet potatoes with salt, black pepper, and cinnamon.
- Spread the sweet potatoes on a baking sheet and roast until tender and caramelized, flipping halfway through cooking.
- While the sweet potatoes roast, cook the lean ground beef in a skillet until browned.
- Stir the tomato paste and taco seasoning into the cooked beef.
- Cook briefly until the beef mixture is well combined.
- Divide the roasted sweet potatoes among 4 bowls.
- Top each bowl with the seasoned ground beef.
- Add cottage cheese and sliced avocado.
- Warm the hot honey slightly if needed, then drizzle 1 tablespoon over each bowl.
- Serve immediately.
Notes
- Flip the sweet potatoes halfway through roasting so they caramelize more evenly.
- The cinnamon should lightly season the sweet potatoes without making them taste like dessert.
- Add the tomato paste and taco seasoning after the beef has browned.
- Warm the hot honey slightly if it is too thick to drizzle easily.
- Serve the bowls soon after adding cottage cheese, avocado, and hot honey.
- Optional additions: sautéed spinach, roasted broccoli, or corn.
- Supported swaps: ground turkey, ground chicken, plant-based ground “beef,” dairy-free cottage cheese or sour cream, or butternut squash instead of sweet potatoes.
Storage and Reheating
Store the components separately in airtight containers in the refrigerator for 3 to 4 days.
For meal prep, keep the cottage cheese, avocado, and hot honey separate until serving. Reheat the ground beef and sweet potatoes before assembling the bowls. The beef and sweet potatoes can be reheated in the microwave or in a skillet.
Add avocado and hot honey just before serving.
