Description

These honey garlic salmon soba noodle bowls are made with roasted salmon, Brussels sprouts, broccoli, and tahini-coated soba noodles. The salmon is tossed in a sweet-savory honey garlic sauce, while the tahini noodle sauce gets loosened with hot water so it coats the noodles smoothly.

Ingredients

For the Salmon and Vegetables

  • 4 salmon fillets, 4 to 6 ounces each
  • 1 tablespoon grated fresh ginger
  • 1/3 cup honey
  • 1/2 cup tamari or soy sauce
  • 1 tablespoon Gochujang, or hot sauce
  • 2 cloves garlic, chopped
  • 4 green onions, sliced
  • 1/2 pound Brussels sprouts, halved
  • 2 small heads broccoli, cut into florets
  • Extra virgin olive oil
  • Kosher salt
  • Black pepper

For the Tahini Soba Noodles

  • 1 package soba noodles
  • 1/3 cup tamari or soy sauce
  • 1/4 cup tahini
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon grated fresh ginger
  • Crushed red pepper flakes, to taste
  • Hot water, as needed to thin the sauce

Optional Toppings

  • Toasted sesame seeds
  • Fresh herbs
  • Avocado

Instructions

  • Preheat the oven to 425°F.
  • In a bowl, whisk together the honey, tamari or soy sauce, Gochujang or hot sauce, grated ginger, garlic, and green onions.
  • Add the salmon to the sauce and let it marinate while you prepare the vegetables.
  • Arrange the Brussels sprouts and broccoli on a sheet pan.
  • Drizzle the vegetables with olive oil and season with kosher salt and black pepper.
  • Roast the vegetables.
  • Add the salmon to the sheet pan and roast until the salmon is cooked through and the vegetables are tender.
  • Cook the soba noodles according to the package directions, then drain.
  • In a separate bowl, whisk together the tamari or soy sauce, tahini, toasted sesame oil, grated ginger, and crushed red pepper flakes.
  • Add a little hot water to the tahini sauce and whisk until smooth enough to coat the noodles.
  • Toss the cooked soba noodles with the tahini sauce.
  • Divide the tahini soba noodles among 4 bowls.
  • Top with the roasted broccoli, Brussels sprouts, and honey garlic salmon.
  • Garnish with toasted sesame seeds, fresh herbs, or avocado if desired.
  • Serve warm.

Notes

  • Add hot water to the tahini sauce a little at a time until it becomes smooth and easy to toss with the noodles.
  • Tamari can be used instead of soy sauce for a gluten-free option.
  • Any noodles can be substituted for soba noodles if preferred.
  • Keep optional toppings simple. Toasted sesame seeds, fresh herbs, or avocado all work well.
  • Do not skip draining the noodles before tossing them with the tahini sauce.

Meal Prep and Leftover Notes

  • Detailed storage and reheating times are not provided.
  • If preparing ahead, keep the salmon, vegetables, and noodles in separate containers when possible.
  • The tahini sauce may thicken as it sits. Add a small splash of hot water before serving if needed.
