Description

These dense, baked breakfast bars combine quick-cooking oats, protein powder, flax seed, and wheat germ for a high-protein, make-ahead breakfast. Mashed bananas and peanut butter create a chewy, flavorful base that holds together perfectly for slicing and portioning.

Ingredients

Cooking spray
1 ½ cups quick-cooking oats
¼ cup wheat germ
¼ cup ground flax seed
2 tablespoons vanilla-flavored hemp protein powder
1 teaspoon ground cinnamon
½ teaspoon salt
3 bananas (mashed)
¼ cup peanut butter (such as Jif)
2 tablespoons honey
1 teaspoon vanilla extract
¼ cup natural peanut butter (for topping)

Instructions

Preheat oven to 375°F (190°C)
Line an 8×8-inch pan with parchment paper, spray with cooking spray
In a large bowl, mix oats, wheat germ, flax seed, protein powder, cinnamon, and salt
In a separate bowl, mash bananas and blend with peanut butter, honey, and vanilla extract until smooth
Pour wet ingredients into dry mixture and stir until fully combined
Press half the mixture into the prepared pan
Spread reserved natural peanut butter evenly over the top
Add remaining wet mixture and lightly press to form a flat surface
Bake for 25-30 minutes, rotating halfway for even browning
Cool completely before slicing into 12 bars

Notes

If the mixture is too dry, add up to 3 tablespoons of milk
Wrap individual bars tightly in plastic to store in the refrigerator for up to 7 days
Use a serrated knife for clean cuts
Substitute other unsalted nut/seed butters for the peanut butter if preferred
