Description

A revamped Big Mac-inspired pasta salad with tender pasta, seasoned ground chicken, crisp lettuce, pickles, and cheddar in a creamy tangy dressing. A quick, meal-prep-friendly dish ready in 35 minutes.

Ingredients

10 ounces medium pasta (rotini, penne, or fusilli)
1 pound ground chicken
1 small onion, sliced
1 cup shredded iceberg or romaine lettuce
1/2 cup chopped dill pickles
1/2 cup shredded sharp cheddar cheese
1 cup plain Greek yogurt
1/2 cup mayonnaise
1 tablespoon yellow mustard
2 tablespoons ketchup
2 tablespoons chopped pickles
2 tablespoons pickle juice
1 teaspoon paprika
1 teaspoon salt

Instructions

Cook pasta al dente according to package directions; drain and cool.
In a skillet, cook ground chicken over medium heat. Add salt, garlic powder, and onion powder; cook until browned. Set aside.
Sauté sliced onion until softened; combine with cooked chicken.
Whisk together Greek yogurt, mayo, mustard, ketchup, chopped pickles, pickle juice, paprika, and salt to make dressing.
In a large bowl, combine cooked pasta, chicken mixture, lettuce, pickles, and cheddar cheese. Toss with dressing.
Chill for 1 hour before serving.

Notes

Store in an airtight container for up to 4 days.
Use ground turkey or lean beef instead of chicken.
Swap iceberg lettuce for romaine for added crispness.
Dressing thickens in the fridge—add a splash of water or pickle juice if desired.
