Description
A quick one-skillet dinner featuring lean ground turkey and tender sweet potatoes, ready in 27 minutes. Packed with flavor from garlic, onions, peppers, and mozzarella cheese, this meal balances heartiness and simplicity for busy weeknights or meal prepping.
Ingredients
2 tablespoons extra virgin olive oil
1 pound free-range extra-lean ground turkey
1 teaspoon minced garlic
½ cup diced onions
½ cup diced yellow pepper
1½ cups diced sweet potato
Salt and freshly ground black pepper
A pinch of red chili flakes, optional
½ cup shredded mozzarella cheese
Fresh parsley, for garnishing, optional
Instructions
- In a cast iron skillet, heat the olive oil over medium-high heat.
- Add the ground turkey and minced garlic to the skillet. Use a wooden spoon to break up the turkey as it cooks, stirring occasionally for about 5 minutes until browned.
- Stir in the diced onions and yellow peppers. Cook them until the onions soften.
- Add the diced sweet potato, red chili flakes (if using), salt, and pepper to the skillet, stirring to combine.
- Cover the skillet and continue to cook until the sweet potatoes are tender. Stir occasionally. If the pan seems too dry or the sweet potatoes need more liquid to soften faster, you may add a little more olive oil or a small amount of water.
- While the sweet potatoes are cooking, preheat your oven to 400ºF.
- Once the sweet potatoes are tender, sprinkle the shredded mozzarella cheese over the top of the skillet. Transfer the skillet to the preheated oven to melt the cheese.
- When the cheese is melted and bubbly, carefully remove the skillet from the oven. Garnish with fresh parsley, if desired, before serving.
