1 tablespoon minced garlic
â…“ cup minced shallot
2 teaspoons minced ginger
¼ teaspoon red pepper flakes (optional)
â…“ cup water chestnuts, finely chopped
â…“ cup bamboo shoots, finely chopped
1 cup shiitake mushrooms, stems removed and chopped
1 cup finely diced carrots
1 pound ground turkey
3 tablespoons hoisin sauce
2 teaspoons soy sauce
¼ cup thinly sliced green onions
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ cup chopped cashews
1 head butter lettuce, washed and dried (12 leaves)

Instructions

Preheat sauté pan over medium-high heat and swirl in 1 tablespoon vegetable oil
Add garlic, shallot, ginger, and red pepper flakes (if using), sautéing until fragrant (1-2 minutes)
Increase heat to high and add ground turkey, breaking apart with a spatula
Cook until browned (6-7 minutes)
Stir in water chestnuts, bamboo shoots, mushrooms, and carrots
Deglaze with hoisin and soy sauce, tossing to coat
Season with salt, pepper, and remaining 1 teaspoon vegetable oil
Finish with green onions and cashews
Serve piping hot turkey mixture in chilled butter lettuce cups

Notes

Let turkey filling cool completely before refrigerating for up to 4 days
Assemble wraps just before serving to preserve lettuce crispness
For extra crunch, chill lettuce leaves in ice water for 10 minutes
Add a rice stick noodle ”sleeve” inside lettuce leaves for grain-free wraps if desired
