Description

These Crispy Chickpea Caesar Salad Wraps are made with skillet-crisped chickpeas, chopped romaine, avocado, tomato, and a creamy vegan Caesar-style dressing. Keep the dressing separate if making the wraps ahead so the romaine stays crisp.

Ingredients

For the Vegan Caesar Dressing

  • 1/2 cup vegan mayo
  • Lemon juice
  • Fresh parsley
  • Garlic
  • Capers
  • Caper brine
  • Spicy mustard
  • Black pepper
  • Salt

For the Crispy Chickpeas

  • 1 15-ounce can chickpeas, drained and rinsed
  • Garlic salt
  • Onion powder
  • Smoked paprika
  • Black pepper
  • Dried parsley
  • Oil, for cooking

For the Wraps

  • 4 large wraps
  • 2 heads romaine, chopped
  • 2 avocados, sliced
  • 2 tomatoes, sliced

Instructions

  • Add the vegan mayo, lemon juice, fresh parsley, garlic, capers, caper brine, spicy mustard, black pepper, and salt to a food processor.
  • Pulse until the Caesar dressing is combined.
  • Taste and adjust the seasoning as needed.
  • Refrigerate the dressing until ready to use.
  • In a bowl, combine the drained and rinsed chickpeas with garlic salt, onion powder, smoked paprika, black pepper, and dried parsley.
  • Heat the oil in a skillet over medium heat.
  • Add the seasoned chickpeas to the skillet.
  • Cook for about 5 minutes, stirring frequently, until the chickpeas are slightly crispy.
  • Transfer the chickpeas to a bowl.
  • If serving right away, toss the chopped romaine with the Caesar dressing.
  • Layer each wrap with dressed romaine, crispy chickpeas, sliced avocado, and sliced tomato.
  • Roll each wrap tightly.
  • Cut each wrap in half and serve.

Notes

  • If making these ahead for lunch, keep the dressing separate.
  • Add the dressing just before serving so the romaine stays crisp.
  • Fully dressed romaine is best for immediate serving.
  • Do not freeze these wraps.
  • These wraps are served cold, so reheating is not needed.

Notes

  • The chickpeas should be slightly crispy, not fully roasted.
  • Stir the chickpeas frequently while cooking so they crisp evenly and do not sit too long in one spot.
  • Capers and caper brine help give the dressing its Caesar-style tang.
  • Do not add chicken, cheese, eggs, dairy Caesar dressing, or animal-based Caesar ingredients to the core recipe.
  • Roll the wraps tightly so the filling stays inside.
  • Cut each wrap in half before serving.
