Description
This Creamy Cottage Cheese Chicken Salad is a quick cold lunch made with cooked shredded chicken, blended cottage cheese, celery, red onion, lemon juice, Dijon mustard, fresh dill, and a small amount of avocado oil mayonnaise. Blending the cottage cheese first gives the salad a smoother, classic chicken salad texture.
Ingredients
- 1 cup full-fat cottage cheese
- 2 cups cooked shredded chicken, cooled
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 2 tablespoons avocado oil mayonnaise
- 1 tablespoon fresh lemon juice
- 2 teaspoons Dijon mustard
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon garlic powder
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Add the cottage cheese to a high-powered blender.
- Blend until smooth and creamy.
- Add the blended cottage cheese, cooked shredded chicken, celery, red onion, avocado oil mayonnaise, lemon juice, Dijon mustard, fresh dill, garlic powder, salt, and pepper to a large mixing bowl.
- Stir until everything is well combined and the chicken is evenly coated.
- Taste and adjust with more salt and black pepper if needed.
- Serve immediately, or chill before serving for a colder, more settled chicken salad.
Notes
- Use cooked, cooled shredded chicken so the dressing stays thick and creamy.
- Blending the cottage cheese creates a smoother texture than stirring it in straight from the container.
- Chilling the salad before serving can help the flavors settle.
- Serve in sandwiches, wraps, lettuce wraps, over greens, with crackers, or with vegetables.
- Stir before serving if the salad releases a little liquid while stored.
Storage
Store the chicken salad in an airtight container in the refrigerator for up to 4 days.
Keep it cold until ready to serve. Freezing is not recommended because the creamy base and fresh herbs do not hold up well after thawing.
