Description

A quick, no-cook chicken salad combining tender cooked chicken, sweetened dried cranberries, crisp green apple, and pecans for a balanced, texturally rich lunch ready in 15 minutes. Served chilled or at room temperature.

Ingredients

2 cooked chicken breast halves, chopped
½ cup mayonnaise, or to taste
2 green onions, chopped
½ cup sweetened dried cranberries
¼ green apple, shredded
¼ cup chopped pecans
1 tablespoon lime juice
¼ teaspoon dried dill weed
Salt and black pepper, to taste

Instructions

In a medium bowl, combine the chopped cooked chicken and mayonnaise, stirring until evenly coated.
Add the chopped green onions, sweetened dried cranberries, shredded green apple, and chopped pecans.
Pour in the lime juice and sprinkle the dried dill weed, salt, and black pepper.
Stir all ingredients together until thoroughly combined.
Chill for several hours or overnight to enhance flavor, or serve immediately.

Notes

For a fresher flavor, use 1 tablespoon fresh chopped dill instead of dried dill weed.
Roast turkey can substitute for chicken breast halves.
Store in an airtight container in the refrigerator for up to 3 days.
