Description

These Cottage Cheese Chicken Enchilada Bowls are warm high-protein lunch bowls made with shredded rotisserie chicken, taco seasoning, a smooth cottage cheese enchilada sauce, red bell pepper, corn, black beans, cheddar, and fresh garnishes.

Ingredients

  • 4 oz rotisserie chicken breast, shredded
  • 4 tablespoons taco seasoning
  • 1 cup low fat cottage cheese
  • 4 tablespoons enchilada sauce
  • 1/2 red bell pepper, diced
  • 1/4 cup canned corn, drained
  • 1/4 cup black beans, rinsed and drained
  • 1 cup shredded cheddar

Garnish

  • Chopped cilantro
  • Avocado slices
  • Sour cream

Instructions

  1. In a medium mixing bowl, combine the shredded rotisserie chicken with the taco seasoning.
  2. Toss until the chicken is evenly coated.
  3. In a blender or food processor, blend the cottage cheese and enchilada sauce until smooth and creamy.
  4. Pour the cottage cheese enchilada sauce over the seasoned chicken.
  5. Stir until fully combined.
  6. Fold in the diced red bell pepper, drained corn, and rinsed and drained black beans.
  7. Mix until everything is evenly coated.
  8. Divide the mixture evenly between two microwave-safe containers.
  9. Sprinkle the shredded cheddar over the top of each bowl.
  10. Microwave for 1 to 2 minutes, or until heated through and the cheese is melted.
  11. Top with chopped cilantro, avocado slices, and a dollop of sour cream.
  12. Serve warm.

Meal Prep and Storage

If meal prepping, do not microwave the bowls before storing if they will be reheated later.

Store the assembled bowls in the refrigerator for 4 to 5 days.

Add the cilantro, avocado slices, and sour cream when ready to eat.

To reheat, microwave for 1 to 2 minutes, or until heated through and the cheese is melted.

Notes

  • This recipe uses rotisserie chicken breast, so no raw chicken cooking is needed.
  • Blend the cottage cheese with the enchilada sauce until smooth for the creamiest texture.
  • Use microwave-safe containers for heating.
  • Divide the mixture evenly so each bowl has the same amount of chicken, sauce, vegetables, beans, corn, and cheese.
  • Add the garnishes after heating so they stay fresh.
